Apsara (Anse Chastanet, Soufriere) – this restaurant serves dishes with both Indian and Caribbean influences, such as mulligatawny soup with cumin yogurt or vegetable samosas, coconut-chili king prawns, pork vindaloo, tandoori-roasted salmon, as well as lamb chops, chicken, and lobster. Its unique desserts include seamoss-flavored kulfi (Indian-style ice cream) and something called “Apsara’s Temptation” (tandoori-baked pineapple with honey, saffron, and passion-fruit syrup, kulfi, and sun-blushed chili).
